chester & cheese
on my sunday in england i went to chester, a former roman city that is nearly 2,000 years old and is still surrounded by its original city walls. i spent most of my time there just walking around, admiring the old architecture, which is 1 of my favourite things to do. you can even walk along the ancient city walls to see the town from a different angle.
chester is located in the county of cheshire, which is really well known for its cheese. cheshire cheese is the oldest named cheese in the british isles, predating the romans. chesire cheese is even mentioned in the doomsday book [a survey of england done by william the conqueror in the 11th century]. it is made from cow’s milk, and according to my booklet from the british cheese board:
the flavour and aroma should be clean, mild, slightly acidic and slightly salty; more mature cheeses become tangy with age. cheshire should be moderately firm with an open crumbly texture. white cheshire should be bright white and red cheshire should be a bright, even pale orange.
while walking through chester, i came across a street market where there was a cheese stand, so i became thoroughly excited because i love cheese. i bought some crumbly white cheshire, but i haven’t eaten it yet because i thought it would be pointless to try to enjoy it while i was so sick. perhaps i will try some tomorrow.
